Beef and Sausage Chili

Everyone has their own version of chili, this is our family's. It’s a combination of ground beef and italian sausage with lots of vegetables slow simmered in a crockpot for a hearty slightly spicy full flavored chili without beans. We serve it in bowls with add ins on the side, such as cheddar cheese, green onions, jalapenos, chopped tomatoes and sour cream. Leftovers are great on a baked potato or pasta.

Ingredients

20 minute cook, 8 hr crockpot
8 servings
  1. 1 poundground beef
  2. 1 poundhot or sweet italian sausage or.a combination, casings removed
  3. 2medium onions, chopped
  4. 3celery stalks, chopped
  5. 2jalapeno peppers, chopped
  6. 1/2carrot, chopped
  7. 6garlic cloves, chopped
  8. 1green bell pepper, chopped
  9. 1 can (15 oz)fire roasted tomatoes, drained reserve liquid
  10. 1 can (28 ounce)crushed tomatoes, drained reserve liquid
  11. 1/2 cupketcup
  12. 4 tablespoonschili powder
  13. 1/4 cupdry white wine
  14. 2 tablespoonsheavy cream
  15. 1 tablespoonfresh lemon juice
  16. 1/2 teaspoonpepper and salt to taste
  17. 1 teaspoonor more to taste of hot sauce, such as Frank’s brand
  18. To Finish
  19. 1/4 cupfreshly grated romano cheese
  20. 2 tablespoonschopped fresh parsley

Steps

20 minute cook, 8 hr crockpot
  1. 1

    In a large skillet brown beef and sausage and remove to a 2 to 4 quart crockpot.

    Add all chopped vegetables to skillet meat was cooked in and cook to soften. About 5 minutes.

    Add wine and reserved tomato liquid and simmer and reduce until almost gone, add to crockpot with meat.

    Strain out all excess fat and discard. Add cheese and parsley, stir in

    Add all remaining ingredients, except romano cheese and parsley to crockpot, give a quick stir, cover and cook on low for 8 hours.

    Serve in bowls, garnish with shredded cheddar cheese, shredded lettuce, sour cream, chopped tomatoes and chopped jalapenos. Bread is also great for dipping. Enjoy!

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.

If I add red kidney beans to this recipe would it negatively alter the flavor? I made it as is and it is delicious, but my husband wants beans in it. Would the beans ruin the taste.? Thanks!
