Cut the chicken into bite-sized pieces. Blanch in boiling water until half-cooked. Lightly crush the garlic cloves and set aside.

Add sesame oil to a pan and heat gently. Add the ginger slices and sauté until fragrant and slightly wilted.

Add the garlic and chicken pieces. Stir-fry until aromatic, then add all the seasonings. Cook until the chicken is fully cooked and has absorbed the flavors.

Add the Thai basil leaves and stir-fry briefly. Just before removing from heat, drizzle a little more sesame oil for extra aroma.
