Ingredients

  • 1large cucumber
  • 1onion
  • 2 cupsvegetable stock
  • 2 tablespoonbutter
  • 2 tablespoonflour
  • Salt and pepper
  • 1 cupplain yoghurt
  • cubesIce
  • Cucumber slices for garnish

Steps

  1. 1

    Dice cucumber finely chop onion. Place in pan and simmer for 20 minutes until tender

  2. 2

    Cool and blend until smooth

  3. 3

    Melt butter in pan, add flour and cook one minute stirring frequently. Gradually add cucumber pjree. Simmer for 2 minutes. Season with salt and pepper
