Mix the flour with the Ajwain, oil, salt and water make a soft dough.

Divide the dough into 10-12 small portions. Roll them like chapathi. Prick with fork, so that it don't puff out.

Heat the oil in a pan,fry the poori, on medium or low flame till it turns crisp and golden in colour. Drain the Poori on tissue paper to remove the excess oil.

Boil and peel the potatoes. Mash the boiled Pototoes. In pressure cooker add the mashed potatoes, chopped tomato, green chillies and spinach. Pressure cook and take 1 whistle.
While serving, Place poori and top with cooked aloo mixture.
Drizzle tamarind chutney, curd,green chutney on top of it.
Sprinkle chaat masala, coriander leaves and serve it.
