Spiced managu

Managu is one of my favourite indeginous veggies and i always love it when my mum cooks its... She cooks everything at once like, after cleaning the managu,she cuts the onions and tomatoes and cooks them all at once then when ready she just adds the butter/cream from the milk and its done....i love her method bt mine i have added some spices but its some how the same.

Sort/select your managu and clean them properly.

In a sufuria boil water add salt then the managu, boil untill its soft.The salt helps to retain the green colour.

In a clean sufuria heat the cooking oil, add in the spring onions,fty them untill they turn brown bt dont burn them.

Add in the tomatoes...cook them to form a paste like consistency.Add 1 tsp mixed spice and mix well.

Add in the pre cooked managu, mix well....stir for 1 minute.

Your managu is now ready...you can add cream(optional).

Serve hot with ugali, Rice, Chapo and any other starch available. Enjoy
