Ingredients

35-40 minutes
  1. 1. 1 Package refrigerated sugar cookie dough
  2. 2. Choice of berries, or other fruit toppings
  3. For No-Bake Cheesecake Filling
  4. 1. 8 oz. cream cheese
  5. 2. ½ cup sugar
  6. 3. 1 tsp vanilla
  7. 4. 1 Cup whipped cream

Cooking Instructions

35-40 minutes
  1. 1

    Preheat oven to 350 degrees.

    Press each cookie dough slice into a greased muffin tin. Press into the bottom and up the
    sides about ⅔ of the way to create a little bowl.

    Bake for about 16-18 minutes until the edges just start to turn a golden brown color.

    Allow to cool for 5 minutes. Transfer to a wire rack to cool completely.
    (Try turning the pan upside down and gently tapping to remove from pan.)

    While the cups are cooling, beat cream cheese until smooth.

    Add in sugar and vanilla, and beat for about 2-3 minutes until creamy.

    Fold in the whipped cream.

  8. 8

    Spoon cheesecake filling (or pipe it) into each cookie top.

    Top with your choice of fruit and chill before serving.

My favorite food to cook is Italian and Southern Style or "Soul Food". I love to cook.... Cleaning up after, not so much!! I owe what I know in the kitchen to 3 important women in my life, my mom (love and miss you mama) , my mother-in-law and my Granny Drunell (how we miss you too!!!) Granny Drunell is actually my husband's grandma, but she was just one of those souls that makes everybody feel as if they were one of her children or grand childlren. She was probably the best cook I knew... Followed closely by my other 2 mentors. I don't know what I would've done if it weren't for these wonderful women, mothers, grandmothers.... Who were some of the best cooks ever!!! I might not be as good as any of them but hopefully with age, experience and what they taught me I will someday be n their level!!
