I use a 50/50 mix of ata mark and regular all purpose flour for this recipe. My mum loves rubbing ghee into the flour for a nice flavour. So I did it her way.

I use a 50/50 mix of ata mark and regular all purpose flour for this recipe. My mum loves rubbing ghee into the flour for a nice flavour. So I did it her way.

Ingredients

One hour
  1. 1 cupAta Mark flour
  2. 1 cupall purpose flour
  3. 1 cuphot water
  4. 1/2 teaspoonsalt
  5. 1 tablespoonghee
  6. Cooking oil for roasting

Cooking Instructions

    Measure the flour and salt into a bowl

    Rub the ghee into the flour with your fingers until it is evenly spread

  3. 3

    Add a little hot water at a time, and knead until the dough holds together well, without sticking to the bowl

    Cover the bowl with a tea towel and let it sit for half an hour

  5. 5

    Place the dough on a clean surface. Dust it with flour and roll it into a large circle using a rolling pin. Then apply oil on it and divide it into eight parts.

    Fold each piece and roll it inti a ball

    Roll each ball into a chapati using the rolling pin. Dust it with flour first, and exert pressure on the edges of the ball so that it becomes a circle.

    Roast each chapati on a hot pan with a little oil.

    Serve with soup
