Tuna-Stuffed Anaheim Peppers

Wash the peppers and boil them for 10 minutes. Do not boil longer, or they will become too soft and fall apart. After boiling, remove the peppers and make a vertical slit to take out the seeds and veins.

Chop the onion and tomato, then mix them with the tuna.

Stuff the peppers with the tuna mixture and coat them with flour.

Separate the egg whites and beat them until stiff peaks form. Add the yolks and beat until the mixture is smooth and uniform.

Heat a skillet with oil. Dip the stuffed peppers in the egg mixture, then fry them on all sides until golden brown. Remove and place on a plate lined with paper towels to absorb excess oil.
