Ingredients

  1. 1 2/3 cups (240 g)all purpose flour
  2. 1 cup (200 g)sugar
  3. 1/4 tspbaking soda
  4. 1 tspbaking powder
  5. 3/4 cupsalted butter (170g), room temperature
  6. 3egg whites
  7. 3 tspvanilla extract
  8. 1/2 cup (120 ml)sour cream
  9. 1/2 cup (120 ml)milk
  10. Icing:
  11. 1/2 cup (115 g)butter
  12. 1/2 cup (95 g)shortening
  13. 4 cups (480 g)powdered sugar
  14. 2-3 tbsp(30-45ml) water or cream
  15. 1 tspvanilla extract

Steps

  1. 1

    Preheat oven to 350 degrees

  2. 2

    Whisk together flour, sugar, baking soda and baking powder in a large mixing bowl.

  3. 3

    Add butter, egg whites, vanilla, sour cream and milk and mix on medium speed just until smooth. Do not over mix.

  4. 4

    Fill cupcake liners a little more than half way.

  5. 5

    Bake 18-20 minutes.

  6. 6

    Allow to cool for 1-2 minutes, then remove to cooling rack to finish cooling.

  7. 7

    Icing:

    Combine butter and shortening and mix until smooth.

  8. 8

    Add 2 cups of powdered sugar and mix until smooth.

  9. 9

    Add vanilla extract and 1-2 tbsp of water or cream and mix until smooth.

  10. 10

    Add remaining powdered sugar and mix until smooth.

  11. 11

    Add a little more water or cream until desired consistency is reached.

  12. 12

    Top cupcakes with icing.

  13. 13

    Note: You may notice little bits of butter in the batter, but that's ok. They will melt into the cupcake as they bake
