Peel the potatoes and half them and place in a bowl with the food color and let it sit to absorb the color

Thinly slice the onions and place in a large pan and deep-fry till caramelized then remove and set aside

In the same oil, fry the potatoes but don't cook just to get the yellow crunchy coat then take off heat

In a large sufuria, add the same oil and let it heat then add spices and let it roast for about two minutes

Add in the ginger and garlic paste cooking till it sweats.... Then add in half of the caramelized onions

Add in the chicken stirring ensuring it's coated with spices... Add in the potatoes and the blended tomatoes.... Cover and let it simmer for about 15-20min till chicken is halfway cooked

Add in the maziwa Mala, green chillies and tomato paste and salt... Let it cook till the oil separates from the broth... Then take off heat

In another sufuria... ParBoil your rice with salt, oil and water.....when almost cooked take off heat..

In a larger pot.. Place a layer of the rice... Then a layer of the biriyani stew then some of the half caramelized onions left...it should look like that.... Then continue layering till both are finished

On the top layer finish with rice and onions on top... Add your food color sprinkling it all over...cover with aluminum foil and put back on low heat for about 10min..to cook the rice
