Heat your wok with Olive oil, chuck in all the above ingredients except the mackerel and noodles, there's not order, keep mixing well.

Cook your egg noodles in a pan of boiling water for 5 minutes, drain then add to your stir fry.

For the mackerel, mine were plain shop bought, I added a squeeze of lemon, salt, pepper and fresh coriander and cooked in the over wrapped in foil for 40 minutes.
