Brine chicken in buttermilk overnight

Dredge chicken in flour/corn starch, let rest 30 minutes at room temperature.

Heat oil to 310 degrees Fahrenheit TEMPERATURE IS IMPORTANT DO NOT LET IT GET BELOW 300 DEGREES or above 325

Cook 1 drumstick & 1 thigh for 8 minutes, flip, add remaining chicken

After 8 minutes remove 1st batch of chicken and place on wire rack to cool/dry/drain DO NOT PLACE ON PAPER TOWEL as will make soggy

After 8 minutes remove 2nd batch of chicken and place on wire rack to cool/dry/drain
