I love Quang-style noodles, so whenever I have free time, I make them at home. My house is near Ba Hoa Market, so I can easily get all the ingredients—pre-roasted, shelled peanuts, fragrant grilled rice crackers, and more. I remember when we used to make Quang noodles at home, we had to roast the peanuts and grill the rice crackers ourselves, but now I just buy them at the market.

Ingredients

  • 10 1/2 ozpork spare ribs (about 300 grams)
  • 7 ozshrimp (about 200 grams)
  • 6quail eggs
  • 2.2 lbsQuang-style noodles (about 1 kg)
  • Mixed fresh herbs, seasonings, roasted peanuts

Steps

    Marinate the pork ribs: Combine 1 tablespoon minced onion, 1 tablespoon minced garlic, a pinch of black pepper, 1/2 tablespoon salt, 1 tablespoon fish sauce, 1 tablespoon seasoning powder, 1/2 tablespoon turmeric, and 1/2 tablespoon sugar. Mix well and let marinate for 30 minutes.

    Prepare the shrimp: Remove the heads, tails, and legs, then marinate the shrimp the same way as the ribs.

    Boil the quail eggs until cooked, then peel them.

    Prepare the fresh herbs.

    Make the broth: Sauté onion and garlic until fragrant. Add the pork ribs and cook until they are browned. Add the shrimp and continue to stir-fry until the shrimp are firm. Remove the ribs and shrimp. Add vegetable broth (I usually make broth from cabbage and carrots for natural sweetness, so I don't need to add sugar or extra seasoning). Bring the broth to a boil.

    To serve: Place the Quang noodles in a bowl (I buy pre-cut noodles mixed with aromatic oil, so I don't blanch them again to keep the flavor). Arrange the shrimp, quail eggs, and pork ribs on top. Ladle the broth over, then sprinkle with chopped green onions, cilantro, and roasted peanuts.
