Thai Basil Glass Noodles With Beef

Wanted to use some fresh basil and glass noodles up. Used a couple other recipes as the basis, and came up with this. I actually used less noodles, because that's what I had, but the recipe has the correct amount. I love the glass noodles, but rice or spaghetti could be substituted if that's all you have.

Steps
- 1
Set noodles to soak in warm water. Soak for 15-30 minutes depending on thickness of dried noodles.
- 2
Mix sauce ingredients in a small bowl. Set aside.
- 3
Clean Basil leaves, set aside.
- 4
Cut other veggies, set aside.
- 5
Add a drizzle of oil to a stir-fry/work/skillet. Heat it on medium, add garlic, stir for 30 seconds.
- 6
Add beef to pan, stir and break it up until mostly cooked.
- 7
Add chopped onion, mushrooms, carrots. Stir for about 3-4 minutes.
- 8
Drain noodles, add noodles to pan, stir in for 2-3 minutes. Then add sauce, stir it in.
- 9
Add green onion, stir in, cook 1-2 minutes, until just wilted.
- 10
Turn off heat, add fresh basil leaves.
- 11
Stir Basil leaves until they wilt. Serve.
