Mattar kofte stuffed with apricot in coconut gravy

Fry mattar for 2 mins and keep it on side now get everything in a mixing jar except besan and apricots. Blend it till smooth paste. Add roasted besan in paste and make a dough. Now cut apricots in half. Make balls of mattar dough and stuff it with half apricots. Fry them on medium heat. Your kofte is ready.

For gravy oil in pan, add garlic, ginger, onion sauté till onion becomes soft add haldi, cumin powder, coriander powder, red chilli powder and tomato cook till it turns into a paste add tamarind paste, honey and coconut milk cook for 4-5 mins add salt. Gravy is ready

For tempering ghee in pan once it’s hot add red whole chilli, sesame seeds, and curry leaves once it start crackling it’s ready.

Serving, pour gravy in pan, add kofte and while serving pour hot tadka on top. Serve it with Roomali roti or laccha paratha.
