Tapenade (Olives & Capers Paste)

Tapenade (tapəˈnad) is puréed or finely-chopped Olives (most commonly Black Olives), Capers and Olive Oil. Tapenade is often enjoyed as spread on bread in southern France. I add Garlic and Anchovies as well. This paste is amazingly good with crusty bread but also wonderful for salad. Just think about its ingredients. It cannot to bad. Mix the paste with tomatoes and some chopped red onion will make a heavenly salad. Add some lemon juice to make a yummy dip. This is a wonder paste!

- 1
Chop up everything finely, or blend using a hand blender or food processor. Add Olive Oil gradually, blending, to make the mixture into a thick paste. Season with Salt & Pepper.
- 2
*Note: The paste can be stored just like storing pesto. Drizzle with Olive Oil to cover and store in the fridge or freezer.
