I made these following #GBBO2018 as we are doing an in house #CookpadGBBO they were a lot easier than I thought. I’ll make again.

Empty the water from the tinned chickpeas into a large bowl and whisk with an electric whisk for 7-10 minutes

Add in the vanilla and then the sugar one spoon at a time and keep whisking for a further 10 minutes until soft peaks form.

Pipe a 2p size onto a baking tray. If you want, add a tiny amount of jam to the sides of your piping bag to create small pink stripes.

Bake in the oven at 120 degrees for 1 hour and 20 minutes, cool slowly in the oven. Serve with fresh fruit.
