Bisque
This isn't my own recipe, I think I got it out of a newspaper once and it's been sitting in my recipe notebook for a while. After a week of cold and sometimes wet weather, today is beautifully warm and sunny so I thought I'd cook something summery. 'Bisque' is a French word for fish stew as far as I know.

After a week of cold and sometimes wet weather, today is beautifully warm and sunny so I thought I'd cook something summery. 'Bisque' is a French word for fish stew as far as I know.

Dice the onion and garlic and slice the tomatoes.

Heat some olive oil in a pan and fry the onions and tomatoes until the onions start to change colour.

Add the garlic and chili flakes and fry for a couple more minutes.

Cut the fish into pieces and add to the pan. Add some water so it just about covers the whole bottom of the pan, bring to a boil and then simmer for 10-15 minutes.

Add the prawns and simmer for another 5 minutes. Season with salt and pepper and add more chili flakes if desired.
The original recipe said add parsley at the very end, but I'm using oregano today and I've added it at the same time as the prawns. - 6
To accompany the bisque, I sprinkled a slice of bread with olive oil and some salt and pepper and put the bread under the grill for a few minutes. Serve in a soup bowl.
