Gather the main equipment. ^^

Heat a pan until warm, then add about 2-3 tablespoons of coconut milk and the green curry paste. Stir-fry until fragrant. Add the remaining coconut milk and simmer until the oil separates.

Once the curry boils, add the pork and cook for about 2 minutes. Then add the eggplants, season with fish sauce, and add water as desired. Cover the pan. After a while, check the eggplants; cook until just tender. If cooked too long, they will become mushy. After that, add the kaffir lime leaves and Thai basil, then turn off the heat. Ready to serve. ^^
