Rinse the brinjal well. Pat it dry with napkin and prick the brinjal.

Roast it on open flame until it start to shrink and tender. Switch off the gas. Let it cool down completely.

Remove the skin and mashed it well. Heat the oil in the pan. Add mustard seeds, cumin seeds, asafoetida, chopped green chilli and sauté.

Then add ginger garlic paste sauté for a minute. Add spring onion cook for 2 minutes. Instead of spring onion you can add finely chopped medium size onion. Then add finely chopped methi leaves sauté for a minute.

Then add tomato paste stir it well. Add red chilli powder, coriander seed powder and cumin seed powder and cook till the oil is separating from it.

Now add sweet corn or green peas and cook for a minute. Finally add mashed brinjal and salt. Mix well. Cook and stir continuously for 5 to 6 minutes.

Switch off the gas. Garnish Baingan Bharta with finely chopped coriander leaves and serve with chapati or jawar roti.
