Ingredients

  1. 1 big brinjal (egg plant)
  2. 2 finely chopped spring onion
  3. 1 tsp ginger garlic paste
  4. 1 large size tomato paste
  5. 1 green chilli finely chopped
  6. 1/2 cup finely chopped methi leaves (optional)
  7. 1 tbsp sweet corn or green peas
  8. 2 tbsp oil
  9. 1 tsp mustard seeds
  10. 1 tsp red chilli powder
  11. 1/2 tsp turmeric powder
  12. 1 tsp coriander seed powder
  13. 1/2 tsp cumin seed powder
  14. 1/2 tsp salt(as required)
  15. Finely chopped coriander leaves for garnishing

Steps

  1. 1

    Rinse the brinjal well. Pat it dry with napkin and prick the brinjal.

  2. 2

    Roast it on open flame until it start to shrink and tender. Switch off the gas. Let it cool down completely.

  3. 3

    Remove the skin and mashed it well. Heat the oil in the pan. Add mustard seeds, cumin seeds, asafoetida, chopped green chilli and sauté.

  4. 4

    Then add ginger garlic paste sauté for a minute. Add spring onion cook for 2 minutes. Instead of spring onion you can add finely chopped medium size onion. Then add finely chopped methi leaves sauté for a minute.

  5. 5

    Then add tomato paste stir it well. Add red chilli powder, coriander seed powder and cumin seed powder and cook till the oil is separating from it.

  6. 6

    Now add sweet corn or green peas and cook for a minute. Finally add mashed brinjal and salt. Mix well. Cook and stir continuously for 5 to 6 minutes.

  7. 7

    Switch off the gas. Garnish Baingan Bharta with finely chopped coriander leaves and serve with chapati or jawar roti.
