Take besan, add salt, turmeric powder.

Add curd and make batter.

If needed add water.

Add carrot, green coriander paste.

Now add eno and mix.

Immediately transfer this batter to muffin mould.

Now cook in microwave plus convection mode at 170 degree for 1-2 minutes depending upon the quantity

Cool and demould.

For tempering, heat oil, add mustard seeds, curry leaves, then green chillies.

Add 2 cup water, sugar, and lemon juice.

Boil till sugar melts.

Pour this water over khaman.

Keep rest for 10 to 15 minutes so that it'll absorb water.

Vegetable khaman is ready.
