A favorite dish in Palestine, Jordan, Lebanon, Syria, Iraq, Saudi Arabia, and Egypt, with some variations added over time. Also known as kamaj, shrek, marqouq, or saj bread. Absolutely delicious—I hope you enjoy it!
Saj Meat Pies (with Ground Beef)
A favorite dish in Palestine, Jordan, Lebanon, Syria, Iraq, Saudi Arabia, and Egypt, with some variations added over time. Also known as kamaj, shrek, marqouq, or saj bread. Absolutely delicious—I hope you enjoy it!

Chop the onion and garlic into small cubes. Sauté them in 4 tablespoons oil, then add the ground beef and stir well. After 2 minutes, add all the spices and mix thoroughly with the meat. Once the ground beef is cooked, turn off the heat and let it cool slightly.

Cut the saj bread in half as shown (for homemade saj bread, see my other recipes).

Fill the bread with the ground beef mixture, spreading it evenly as shown.

Add sliced onion, diced tomato, and finely chopped parsley and cilantro on top of the meat. Sprinkle with paprika. (I didn’t get a full photo of the filling this time—next time I’ll take one!)

Cut each filled bread into four pieces. Place in a preheated oven for 1 minute with the heat on top only. Remove and serve hot.

Serve with sauces like ketchup or soy sauce, or any sauce you like. Enjoy!
