Ingredients

  • Water spinach (water-grown water spinach is usually tastier than land-grown)
  • 1large garlic bulb, salt, cooking oil, seasoning powder

Steps

  1. 1

    Break the water spinach into bite-sized pieces and wash thoroughly.

  2. 2

    Add water to a pot and bring to a boil, then add the water spinach. Make sure to boil it in plenty of water over high heat, adding a little salt to maintain the vegetable's natural green color.

    Boil for about 5 minutes, then remove the vegetables and place them in a bowl of ice water to keep them crisp. If you don't have ice, you can skip this step and just drain the vegetables.

  4. 4

    Add oil to a pan and sauté half of the crushed garlic until fragrant. Remove the pan from the heat briefly to lower the oil temperature, then add the vegetables and stir well. Keep the heat low while stir-frying; do not add the vegetables when the oil is too hot, as they will become limp and not crisp. If it seems too dry, add a little of the vegetable boiling water.

    Season with a little salt and seasoning powder to taste, then finally add the remaining garlic and stir well to finish.
