Chicken tinga is a Mexican dish made with shredded chicken in a sauce made from tomatoes, chipotle chilis in adobo, and sliced onions. It is often served on a tostada & topped with avocado slices.

Chicken tinga is a Mexican dish made with shredded chicken in a sauce made from tomatoes, chipotle chilis in adobo, and sliced onions. It is often served on a tostada & topped with avocado slices.
Cooking Instructions

Boil chicken breast & when done set aside for few minutes to cool down.

Slice red onion while you wait for chicken to cool off. Add black pepper seasoning & pinch of salt.

Add some oil in frying pan & add onions. Add pinch of salt & some black Pepper seasoning.

Shred chicken when its cooled of.

Add chicken onto fry pan with onions & stir. Add two slices of garlic cloves.

Open can of chipotle peppers & add with two tomatoes in blender & mix. If you want it less spicy add more tomatoes. The more tomatoes the less spicy.

When done add into frying tan & stir.

Heat for 5 minutes.

Serve onto tostadas with sour cream & enjoy.

You can also make tinga with white onion if you want. I like red onions better. Add some avocados & enjoy.

The inspiration for this dish came about while rewatching Netflix's the Final Table. If you've never seen it, stream it now. It's a glorious hour of food porn, as well as a nice change from the petty rivalries you see in a lot of other competitive cooking shows (seriously, Netflix, when are you gonna drop season 2?). Anyway, in one episode, Taco King Esdras Ochoa made a variation on tinga using artichoke instead of the traditional chicken. It got me curious -- what exactly is tinga? After surfing the 'net a bit for more info, I decided to give it a go myself, except with mushrooms (I guessed they'd be a good substitute for meat). Once done, I piled the tinga onto some freshly steamed rice and topped the lot with a nice, runny egg. I don't know how authentic the end result was (not very, I'm guessing), but regardless it was totally delicious. And in the end, that's what matters. Robert Gonzal -
