Peel 2 ripe plantain, dice and fry. Then set aside.

Wash gizzards with vinegar and fry, then set aside.

Melt butter in a pan add in diced red pepper attarodo and onions, sautee for some minutes and add in the seasonings and spices of your choice. Then mix in the fried gizzards and plantain stir and cover for 2 to 3 minutes.
