Lola Nancy's Chili Recipe

This chili recipe is an old time favorite of mine from when I was a teenager.
I used to race go karts on the weekends. And in the fall season I would take a batch of Mom's chili with me to the track.
It's not your typical spicy hot style Chili, it's more of a milder sweet flavor.
Having a delicious bowl of Mom's chili while racing at the track on those cool fall days was always a treat.

Cooking Instructions

Using 6 tablespoons Extra Virgin Olive Oil in a large pot bring heat up to med high then add the Diced onion to brown stirring occasionally.

Add in 3 lbs ground beef to brown stirring occasionally.

Mix in salt and pepper oregano, chili powder, Tabasco sauce and paprika. Stir to mix well.

Add diced tomatoes and ketchup. Stir to mix well. Cover and Simmer for 2 hours

Mix in (drained) organic dark kidney beans and let's sit for 10 minutes before refrigerating for 12 hours.
