It's Autumn just past our first cold snap it got down to 49 degrees Fahrenheit then that afternoon it was almost 80 degrees Fahrenheit. So here is an inspirational recipe hearty and warming....

Ingredients

  1. Stew----------------------
  2. 1 cuplima beans frozen
  3. 15 ouncescorn whole kernel
  4. 2 poundsBoston Butt Pork Roast bone in
  5. 2 cupcooked rice with English peas
  6. 1 cupchopped celery
  7. 1medium onion chopped
  8. 1 cupyellow crooked-necked squash chopped
  9. 15 ouncecan of Italian zucchini and tomatoes
  10. 1 cupdiced new potatoes white
  11. 1 cupsliced carrots
  12. 2 quartswater
  13. 3 tablespoonoil
  14. Spices-----------------------------
  15. 2 teaspoonHerbs De Provence
  16. 1/2 teaspoonground white pepper
  17. 1 tablespoonkosher salt more if needed to taste
  18. 1/2 teaspoonground sage

Cooking Instructions

  1. 1

    Heat the oil in a pan

  2. 2

    Sear the pork on all sides. Remove from the pan.

  3. 3

    To a 6 quart pot add the seared pork. Add half your water. Bring to a boil.

  4. 4

    Add all the spices.

  5. 5

    Add the rest of the water.

  6. 6

    Add the rest of the ingredients at the mid-way point.

  7. 7

    Let this cook on a simmer stirring occasionally for 3 hours.

  8. 8

    Remove the pork from the stew and take the meat off the bone. At the mid-way point.

  9. 9

    Throw away the bone and put the meat back into the stew.

  10. 10

    Check from time to time for liquids they may reduce too much.

  11. 11

    Taste the stew and adjust spices.

  12. 12

    When everything is incorporated let rest off heat for 20 minutes and serve. I hope you enjoy!!
