Stewed Pork Roast and Vegetables
It's Autumn just past our first cold snap it got down to 49 degrees Fahrenheit then that afternoon it was almost 80 degrees Fahrenheit. So here is an inspirational recipe hearty and warming....
Cooking Instructions

Heat the oil in a pan
- 2
Sear the pork on all sides. Remove from the pan.

To a 6 quart pot add the seared pork. Add half your water. Bring to a boil.

Add all the spices.
- 5
Add the rest of the water.
- 6
Add the rest of the ingredients at the mid-way point.

Let this cook on a simmer stirring occasionally for 3 hours.

Remove the pork from the stew and take the meat off the bone. At the mid-way point.

Throw away the bone and put the meat back into the stew.

Check from time to time for liquids they may reduce too much.

Taste the stew and adjust spices.

When everything is incorporated let rest off heat for 20 minutes and serve. I hope you enjoy!!

I love a pork roast (pieczeń wieprzowa in Polish) and this is one of my best recipes. I call it "In the Polish style" as it is heavy on the garlic. If the name of this dish concerns you, don't worry. The curry in the curry mustard rub isn't overpowering. At all. In fact, it's barely detectable as anything other than a pleasant, mildly-spiced warmth on the crust of the roast. Neither my wife nor my daughter are curry fanatics, and they loved it. As for the chimichurri, well...honestly, it's not entirely necessary to complete the dish. But I just love a nice, bright chimichurri with my pork roast. And this chimichurri is very bright. The swapping of mint for the usual parsley gives it a extra bite which plays well with the savouriness of the roast. Delicious. Robert Gonzal
