Ingredients

Serves 2 servings
  • 6small Yukon Gold potatoes
  • 5 1/3 ozVieux Lille cheese (about 150 grams), well-aged
  • 1 pinchcoarse salt
  • 1 pinchPérigord chili pepper (or substitute with a pinch of cayenne pepper)

Steps

  1. 1

    Boil the unpeeled potatoes in salted water for 40 minutes, starting with cold water.

  2. 2

    Once the potatoes are cooked, rinse them under cold water and cut them in half.

  3. 3

    Place the potato halves in a baking dish.

  4. 4

    Distribute the cheese, sliced, over the potatoes.

  5. 5

    Broil for about 15 minutes until golden and bubbly.

  6. 6

    Serve with an endive and walnut salad, for example.
