Ingredients

  1. 2 cupsfine semolina (about 320 grams)
  2. 1.1 poundsvery finely ground lean beef (about 500 grams)
  3. Hot red pepper paste
  4. Salt
  5. Pomegranate molasses
  6. Olive oil

Steps

    Soak the bulgur for 30 minutes.

  2. 2

    Knead and mix until the mixture becomes smooth and paste-like.

  3. 3

    Add the beef, hot red pepper paste, pomegranate molasses, and olive oil.

  4. 4

    Knead again for about 15 minutes.

  5. 5

    Shape the mixture into small fingers or little bird shapes.

  6. 6

    Garnish with lettuce, parsley, olive oil, and walnuts if desired, then serve.
