I wanted to try rice flour and make something new—of course, with dulce de leche (or manjar), it turns out really delicious.

Combine the dry ingredients in a bowl and add the cooled, melted butter.

Whisk by hand and slowly add the cold milk. Once the batter is ready, heat a skillet with a little oil.

Cook the pancakes on both sides until golden, then remove and spread dulce de leche inside.

Roll up the pancake and serve. This recipe makes about 7 or 8 pancakes using a 9.5-inch (24 cm) skillet. I finished by decorating them with more dulce de leche using a piping bag—delicious with dulce de leche inside and out!
