Jollof rice is one rice that I can't give up on 😋😋😋😋even as student, I always take my time make to make my dishes.. To get that delicious and reddish jollof like this.. Use more of Shombo and tatashi,red bell pepper, fresh tomatoes and tin tomatoes. And another thing, in other for your jollof rice to be overcooked or very soft that it can't last for more than a day..instead of parboiling your rice, washed with either warm water or cold water with salt. It took me less than an hour to make this sumptuous jollof rice

Ingredients

  1. 4 cupsrice
  2. Fresh tomatoes
  3. Tintomatoes
  4. Shombo
  5. Red bell pepper
  6. Tatashi
  7. Onions(diced)
  8. Ginger
  9. Crayfish (grounded)
  10. Vegetable oil
  11. Curry
  12. Thyme
  13. cubesKnorr
  14. to tasteSalt
  15. Green pepper(diced)
  16. Carrot(diced)
  17. Green beans(diced)

Steps

  1. 1

    Steam your meat with onion, curry, thyme, knorr cubes and salt to get meat stock (water from the meat) for cooking the rice and set aside

  2. 2

    In a blender, blend your ginger, fresh tomatoes, Shombo, tatashi, and red bell pepper.set aside

  3. 3

    Wash your rice with warm water or cold water with salt properly and set aside

  4. 4

    Place a pot with oil on fire and allow to a little, add your diced onion, and blended tomatoes, tatashi, Shombo, red bell pepper, ginger and tin tomatoes and fry till it's slightly dry.. Do not allow it get burnt though..to get your sauced meat, while frying, add your steamed meat in the tomato mixture and stir together for a while then remove it.. Trust me, the taste will wow you

    Add your meat stock and water that will be enough to cook the rice to your satisfaction

    Add your curry, thyme, seasoning cubes and salt,stir together and cover to simmer

  7. 7

    Pour your rice and stir together and then cover to cook. Stir occasionally so the ones up will be cooked same as the ones down

  8. 8

    Now add your crayfish when the rice has dried up a little and stir together

    Add your diced veggies, cover it and leave to hear up a little for like a minute. Stir together!

    Your delicious and yummy jollof rice is ready.. Can be served with any soft drink of your choice
