Chicken Fricassee
We used to have this a lot when we were kids. Great way of using up left over cooked chicken if you have it!
Quantities can vary depending on how many you're feeding!
Chicken Fricassee
We used to have this a lot when we were kids. Great way of using up left over cooked chicken if you have it!

Steps
- 1
If the chicken is not already cooked, cook it and put to one side! I use my lovely electric wok for this recipe!
- 2
Put the rice on to cook
- 3
Chop the onion and soften in a little oil or butter with the bacon and pancetta
- 4
Add the chicken, peas and sweetcorn and stir
- 5
Then add the soup (with a little milk if you're using condensed), the tomatoes and the mushrooms (I have to chop mushrooms small so they don't get noticed by the children!!) Mix it all up.
- 6
Cook through until nice and hot and the rice is ready.
- 7
Serve up!
