Carrot cinnamon cupcakes

Heat the oven 180°c and align cupcake baking tin set aside

In a bowl sieve together flour, baking powder, cinnamon and set aside.

In a separate bowl whisk the eggs till frothy. Then add sugar while you continue whisking till well mixed. Add veg. Oil mix well.

Add the flour mixture to the wet ingredients and continue mixing. Then fold in the grated carrots.

Scoop the mixture and pour in the cupcake tins aligned with cupcake papers. Bake till ready.

I used remaining batter to bake a mini cake.
