Ingredients

Serves 4 servings
  1. 2 cupsdried chickpeas (about 400 grams)
  2. 14 ozchicken (about 400 grams)
  3. 12 ozham (about 350 grams)
  4. 9 ozbeef shank (about 250 grams)
  5. 6 ozpork belly (about 180 grams)
  6. 1large onion (about 8 oz or 220 grams)
  7. 1large leek, white part only (about 4 oz or 120 grams)
  8. 3 cupspotatoes, cut into large pieces (about 14 oz or 400 grams)
  9. 2-3large carrots (about 9 oz or 250 grams)
  10. 3garlic cloves
  11. 1chicken bouillon cube
  12. 1 tablespoonextra virgin olive oil (about 15 grams)
  13. 1 teaspoonsalt, optional (the ham is already salty)
  14. 8 1/2 cupswater for the first boil (2000 ml)
  15. 2 cupswater for the second boil (500 ml)
  16. 7 ozfine noodles (about 200 grams), preferably thin

Steps

  1. 1

    Soak the chickpeas overnight.
    Add the chickpeas, chicken, ham, beef shank, pork belly, chicken bouillon cube, and olive oil to a pressure cooker. Pour in 8 1/2 cups water (2000 ml). Close the cooker and cook for 20 minutes after it reaches full pressure.

    While the meat is cooking, peel and cut the carrots and potatoes into large pieces. Peel the onion, leek (remove the green part), and garlic cloves, and add them whole.
    Open the cooker, remove all the meats (chicken, ham, beef shank, and pork belly), and set them aside to serve with the chickpeas.
    If there is any foam, skim it off with a slotted spoon.

    Add the whole vegetables to the broth in the cooker and pour in 2 cups water (500 ml). Close the cooker again and cook for another 20 minutes after it reaches full pressure.
    Strain the broth from the vegetables using a colander. Add the noodles to the broth and cook for 10 minutes. Alternatively, you can cook the noodles in a saucepan with some of the broth and serve them in a separate bowl so everyone can help themselves.
