A cheap and nutritious fail-safe recipe, perfect for cold winter nights; add some tabasco or chilli sauce for an extra-warm kick.
Steps

Dice or chop the vegetables, keeping the cabbage separate.

Heat the oil and cook the pancetta or bacon for a couple of minutes, then add the leek or onion, carrot and celery and stir.

When the vegetables are beginning to soften add the chopped tomatoes and stock, plus pepper to taste. Simmer for 20 minutes.

Add the chopped white cabbage and stir. Continue to simmer for 15 minutes.

Enjoy with cheese on toast, or you can add small pasta shapes at Stage 4 and cook them in the soup for something even more substantial. You may need to add more stock if you do this.
