Being a working mom I'm always looking for ways to short cut my cooking and baking times. This is easy to prepare and while its baking leaves time to help the kids with homework :)

Family recipe, always been vegetarian. Granny Smith apples grow here, we make apple cider and grow table grapes to dry into raisins. The equipment we use is from 1903, to peel and slice, core, and dry apples with. For Strudels, I use fresh apples that are kept cooled. For my daughter, I make a second gluten and sugar free version mentioned in here.

Its supposed to be shredded swiss instead of mozzarella but I have kids and swiss is an acquired taste so I make it this way and my kids love it. Even the picky one!!

Fresh California Strawberries! 2 pounds, trimmed, washed, quartered, blanched, rolled in strudel pie crust.

We get tart or sweet, juicy, large fresh Mission Blueberries in May and June, and make 8” x 8” square strudels for the year, they freeze well, reheat in an hour. If Tart, we add ginger syrup or maple syrup. If Sweet, we add only breadcrumbs to bind the blueberyy juices for a fresh tasting filling.

I have always liked the lemon blueberry combo in foods. I like to zest my lemon and use in the pie fillings, it is optional but very good. I hope this will make your spring and summer a hit at the bbq or dinner. I hope you enjoy.

Make your own pastry strudels with bright fresh fruit flavor and creamy white chocolate. They freeze well and are so much better than store bought

This is a great muffin recipe. I just ran out of baking papers and decided to make cake. If using for muffins, fill muffin papers all the way to the top. Sprinkle strudel on top. Bake at 450 for 5 minutes. Reduce heat to 350 and bake 10 to 15 minutes or until toothpick test comes out clean. #cakes
