Ingredients

2 servings
  • 2eggs
  • Spinach
  • Chopped red onion
  • 2 tbsmilk
  • to tasteSalt and pepper
  • 1 tspCoconut oil

Steps

  1. 1

    Sauté the onions.

  2. 2

    Add the spinach and cook till the spinach is almost wilted.

    Beat the eggs and milk together.

  4. 4

    Add the eggs to the onion and spinach. Cook on medium heat, but keep an eye on it.

    Flip the omelette and let it cook on the other side.

    Serve with some toast or bread (if you are more like me, with some sweet potatoes), and a hot beverage of your choice
