
Charlie Chan Pasta (my version)

I love Yellow Cab's Charlie Chan pasta! And the work mates love it too, so I decided to search the interwebz for a copycat recipe. I tweaked the recipe a bit, swapping out the chicken for pork, made a huge batch on Sunday to take to work for lunch. Try it and let me know what you think.

Cook the spaghetti according to package instructions. Set aside.

Season the pork with salt and pepper.

Heat oil in the wok, then saute the garlic and onion until fragrant.

Add the pork and fry until the meat is no longer pink. This should take around 6 to 8 minutes.

Add the shiitake mushrooms, and cook for 2 to 3 minutes.

Add the raisins and bell pepper, then cook for another 2 to 3 minutes.

Add the oyster sauce, char siu sauce, chili garlic sauce, soy sauce, sugar, and peanut butter. Stir until the sugar and peanut butter are dissolved. Simmer for 5 to 7 minutes.

Add peanuts and carrots, then cook for another 2 to 3 minutes.

Turn the heat down to low, then add the pasta in the wok. Mix well.

Turn off the heat, then add the sesame oil before serving.
