I love Yellow Cab's Charlie Chan pasta! And the work mates love it too, so I decided to search the interwebz for a copycat recipe. I tweaked the recipe a bit, swapping out the chicken for pork, made a huge batch on Sunday to take to work for lunch. Try it and let me know what you think.

Ingredients

Serves 4 to 5 s
  • 1/2 kgspaghetti
  • 650 gramspork, sliced into half-inch pieces
  • Salt and pepper
  • 2 tbspcanola oil
  • 2-3 clovesgarlic, finely chopped
  • 1/2medium onion, finely chopped
  • 3/4 cupoyster sauce
  • 6 tbspLee Kum Kee Char Siu Sauce
  • 2 tbspLee Kum Kee Chili Garlic Sauce
  • 1 tbspsoy sauce
  • 2 tbspsugar
  • 2 tbspLady's Choice creamy peanut butter
  • 1 cupshiitake mushrooms
  • 1/2 cupraisins
  • 1red bell pepper, thinly sliced (optional)
  • 1green bell pepper, thinly sliced (optional)
  • 1/2 cupgreaseless peanuts (optional)
  • 1 cupcarrots, sliced
  • 1/2 cupwater
  • 2 tbspsesame oil (optional)

Steps

  1. 1

    Cook the spaghetti according to package instructions. Set aside.

  2. 2

    Season the pork with salt and pepper.

  3. 3

    Heat oil in the wok, then saute the garlic and onion until fragrant.

  4. 4

    Add the pork and fry until the meat is no longer pink. This should take around 6 to 8 minutes.

    Add the shiitake mushrooms, and cook for 2 to 3 minutes.

  6. 6

    Add the raisins and bell pepper, then cook for another 2 to 3 minutes.

  7. 7

    Add the oyster sauce, char siu sauce, chili garlic sauce, soy sauce, sugar, and peanut butter. Stir until the sugar and peanut butter are dissolved. Simmer for 5 to 7 minutes.

    Add peanuts and carrots, then cook for another 2 to 3 minutes.

  9. 9

    Turn the heat down to low, then add the pasta in the wok. Mix well.

  10. 10

    Turn off the heat, then add the sesame oil before serving.
