In a bowl take maida and Suji. Add oil and salt. Add water and knead dough.

Make equal size balls.

Roll puri and fry in hot oil on medium flame. The puri has to be crispy and fluffy..

Fry all puris.

Semi boil potatoes and saute it with 1 tsp oil. Add salt and chilli powder.

Boil mung in a pan and drain water.

Make saunth chutney with dates, tamarind, jaggery, saunth, Salt and chilli powder. Boil everything until soft. Mix in mixture. Strain and ready to use.

Make coriander chutney using salt, coriander, chilli, cumin.

Fry peanuts in medium flame. Take out and add masala to it.

Take a puri. Break open on one side. Add chopped potatoes. Add mung. Add green chutney overt it. Add chopped onions.add curd. Add peanuts. Add sweet chutney.

Pour curd sprinkle sev. Garnish with sesame, peanuts. Enjoy this Raj Kachori.
