Ingredients

  1. 200 gdried cepes
  2. 1 ltrboiling water
  3. 1K diced smoked streaky bacon
  4. 2K peeled shallots
  5. 2K button mushrooms
  6. 1K diced onions
  7. 1 Tblgarlic
  8. Thyme, bay leaves, salt, pepper
  9. 2 Ltrred wine
  10. 4 ltrveal jus
  11. 400 gtomato purre

Steps

  1. 1

    Soak cepes in boiling water

  2. 2

    Fry off olive oil, bacon, onions, mushrooms, garlic, thyme, bay leaves and season

  3. 3

    Add red wine, reduce by half. Add veal jus, tomato purée, and cepes and water.
