200 gdried cepes
1 ltrboiling water
1K diced smoked streaky bacon
2K peeled shallots
2K button mushrooms
1K diced onions
1 Tblgarlic
Thyme, bay leaves, salt, pepper
2 Ltrred wine
4 ltrveal jus
400 gtomato purre

Soak cepes in boiling water

Fry off olive oil, bacon, onions, mushrooms, garlic, thyme, bay leaves and season
3

Add red wine, reduce by half. Add veal jus, tomato purée, and cepes and water.
