Remove the skins from the roasted peanuts by rubbing them between your hands.

In a blender, combine the peanuts, salt, ginger, lemon juice, green chilies, and a little water. Blend until smooth.

Heat the oil in a pan and add the mustard seeds. Let them pop to make the tempering.

Serve this chutney with idli and sambar.
