Ingredients

  1. 3 tablespoonsoil
  2. 2bay leaves
  3. 500 grambeef, choose cut for stew. And cut into bite size
  4. 20stink bean (optional)
  5. 2 literthin coconut milk
  6. (or 5 cup water and 1 can of thick coconut milk)
  7. 2 tablespoonsfish sauce
  8. 2 tablespoonspalm sugar
  9. Pinchsalt
  10. 4-5boiled eggs (optional)
  11. Spices (ground)
  12. 4 clovesgarlic
  13. 10red cayenne chillies
  14. 25 gramdried shrimp, soak in boilling water to soften
  15. 2 inchgalangal

Steps

  1. 1

    Heat oil in a pot and sauté spice paste and bay leaves until fragrant.

  2. 2

    Add beef and cook until no longer pink.
    Add chayotte, snake beans, and stink beans. Cook until vegetables start to wilt.

  3. 3

    Add coconut milk, fish sauce, and palm sugar. Bring to a boil.

  4. 4

    Reduce heat and cook until the meat is tender. You can add more boiling water if the liquid reduces, try to keep the liquid to 2 liter.

  5. 5

    Add more palm sugar and salt to suit your taste. Turn off heat.
