Ingredients

  1. 1 cupsemolina(thick one dont use idli semolina)
  2. 1 cupcurd
  3. 3 spoongreen chilli ginger paste
  4. 2 tablespoonspilt and dehusked black gram lentils(urad dal)
  5. 3 tablespoonoil (i use saffola lite)
  6. 1 tablespoonchopped cashew
  7. 4-5 piecesgreen raisins
  8. 4-5curry leaves
  9. 2 pinchasafoetida
  10. Halffinely chopped red and yellow bell pepper
  11. 1finely chopped green pepper, onion, red carrot
  12. 10 gramspeas
  13. 10 gramsfinely chopped french beans
  14. 1 tablespoonkasuri fenugreek
  15. 1 packeteno fruit salt
  16. Halfcup water
  17. Salt
  18. Canprepare 20 idlis out of it one can make oats idli too with same method. Just one change half cup semolina and half cup grind oats powder
  19. And for steaming 1 glass water in idli cooker

Steps

    In a big bowl, mix semolina and curd add all above vegetables, ginger chilli paste, water and salt. Mix well and rest it for 20 minutes.

    In a pan, heat 2 spoon of oil, add spilt and dehusked black gram lentils. When it turns reddish brown add curry leaves, cashew, rasins, kasuri fenugreek and asafoetida. Turn off gas add it to semolina curd mix add eno. Add salt if required and mix well. Rest it for 5 minutes.

    Add 1 glass water and pre heat the gas idli cooker. Grease idli stand with oil pour the better and steamed it for 10 minutes.

    Cool down the idlis for while and remove it from stand. Your soft fluffy idlis are ready to serve. Serve it with sambar, green/coconut chutney and pudi masala
