Peel brinjal and cut into cubes. wash and take 2tb. oil in a pan. add asofotida and brinjal pieces. add salt and pinch turmeric powder. saute and cover with dish. pour water on a dish and simmer on a slow flame. 5-10mins. open and check. add garam masala.

Now chopped garlic bhi. small. add pinch salt and melted ghee mix well.

Now take brinjal in khul batta and mash. turmeric green chilli paste and cream. make like a smooth chutney add green garlic chopped mix well. ready to serve. drzzle 2tb. oil.
