Olives with peppers

Important to buy good quality Italian olives, ready to eat, plain with no kind of flavouring. Those in a jar usually work fine. Greek olives are OK too but Italian olives are slightly sweeter. Serve as a starter or a snack :)

Important to buy good quality Italian olives, ready to eat, plain with no kind of flavouring. Those in a jar usually work fine. Greek olives are OK too but Italian olives are slightly sweeter. Serve as a starter or a snack :)

Drain and wash olives in plenty of fresh water. Leave in salted water (just a pinch or two of salt) for a few hours. Stirring or shaking every now and again

Drain, rinse and dry olives well. Put in a jar. Peel the pepper with a potato peeler and chop the flesh of the pepper into small chunks. Add, pepper, garlic, chilli and lemon juice into the jar, shake to coat then add just enough oil to coat all ingredients, shake again and leave for a few hours. I usually make it Saturday evening for Sunday lunch :)
