Ingredients

  • 1.1 lbscassava of good quality (usually if peeled, the skin doesn't stick and comes off easily)
  • 1/2 cupgranulated sugar (sweetness to taste)
  • 2 cupswater or enough to cook the cassava until tender
  • 1/2 teaspoonsalt
  • 3/4 cupthick coconut milk
  • 1 tablespooncornstarch dissolved in a little water
  • 1pandan leaf

Steps

  1. 1

    Peel and clean the cassava, then cut into pieces as desired.

  2. 2

    Place in a pot, boil with water, then add the sugar.

  3. 3

    Boil until tender, allowing the sugar to absorb and the cooking liquid to thicken.

  4. 4

    To make the coconut milk sauce:

    In a pot, boil the coconut milk, add salt, pandan leaf, and the cornstarch solution, stirring well.

  6. 6

    Stir continuously and gently to prevent the coconut milk from breaking. Once it boils, turn off the heat.

  7. 7

    Wait until the cassava and coconut milk sauce are warm, place the cassava pieces in a bowl, pour the coconut milk sauce over them, and the Thai cassava dessert is ready to enjoy.
