Everyone loves popovers (Yorkshire puddings). You can fill these with any number of things. A slice of roast beef, some horseradish cream and a slice of roast potato and you have a Sunday roast you can hold in your hand. OR fill with a scoop of vanilla ice cream, some lemon curd
and some shortbread crumbs and enjoy them as a dessert instead 😊 The choices are endless.

Mix together with a whisk the flour, milk, eggs and salt until a smooth batter is formed. Place the batter in the fridge for 1 hour.

After 50 minutes, Preheat the oven to 220°C (420°F)

Put about a quarter-inch of the vegetable oil in each of twelve muffin holes in a pan and place in the oven until begins to smoke

Take out and carefully pour or ladle the batter from the fridge evenly into each muffin hole. (watch for oil splatter!)

Quickly place muffin tray back in the oven and cook for 20 minutes WITHOUT opening the oven door.

After 20 minutes remove tray from oven and remove the popovers onto paper towels.
