Ofada Stew is very pepperish and delicious native stew that goes well with local rice or just normal rice.
I like this stew because of the assorted meats and eggs makes it a must eat.
The addition of local seasoning called iru gives it that distinct aroma and makes it super healthy too.
So here my easy breezy but still tasty method of making this palm oil stew...

Ingredients

50mins.
4'-8 servings
  1. 3_4 Semi ripe tomatoes
  2. 1small bunch of red chilli peppers
  3. 1small basket of Peppers
  4. 1small basket of Red bell peppers
  5. 1big onions
  6. I wrap of locusts beans/ iru
  7. Assorted meats
  8. Brown cow skin wash and cut
  9. 6hard boiled eggs
  10. 3cooking spoonful of palm oil slightly bleached
  11. Salt
  12. 2stock cubes

Steps

50mins.
  1. 1

    Wash the meats and pomo (cow skin) thoroughly and season according with Salt, stock cube, onions, garlic and pepper and boil till almost tender.

    Wash the tomatoes, different peppers and opinions.. blend but dont nment it smoothly.

  3. 3

    Place a lot on fire, Add the palm oil and allow it to heat up till it becomes almost bleached, Add in some chopped onions. (I like onions so I add some despite the fact that onion is already in the blended tomatoes.)

    Pour in the semi smooth but blended tomatoes a d peppers into the pot and stir. Allow it to fry for a say 5_10 mins depending on how much stew you are making.

    Once it the oil start a to show on the surface, pour in the almost tender boiled meats with the cow skin, add salt and iru and if it needs water,.You can add plain water if the meat stock wasn't enough... The aroma of the iru at this point is simply divine..🤣😂😅

  6. 6

    Stir it and allow to cool till the water content is almost dried... This is the perfect time to add in the already peeled hard boil eggs and allow to simmer on low heat... Stir gently and taste for salt and your delicious Ofada Stew is ready.

    Serve with its usual companion stoneless Ofada Rice with some fried plantain..

Wow...thanks so much...am humbled and glad everyone loved it..
This recipe has been used in my family for as long as I can remember, even before I got to know about this ofada stew recipe, I just added the iru in this to makes it taste super yum.
Since am not yoruba by birth, we use to call it palm oil stew while growing up...but now we know it can be called ofada stew.
