'Lau Besara' is a typical odia dish and is very popular in villages of Odisha. Though a good number of besara items are there in odia cuisine, 'Lau Besara' is more liked by the people for its multiple heath benefits.

'Lau Besara' is a typical odia dish and is very popular in villages of Odisha. Though a good number of besara items are there in odia cuisine, 'Lau Besara' is more liked by the people for its multiple heath benefits.

Peel the bottle gourd and potatoes, cut into long pieces (as shown) and wash properly. Keep it aside.

Blend mustard seeds, poppy seeds, garlic and ginger together to a fine paste.

Heat oil in a deep pan. Add onion and fry till brown. Add bottle gourd and potato. Fry for some time. Add turmeric powder, chilli powder, salt, ground masala paste and saute for a while. Then add water, cover and allow it to cook for 15 minutes on a medium heat.

4. Open the lid, add coriander leaves and remove it from the flame.

Thus ready is the 'Lau Besara' to be served with rice and dal.
